RECIPE: Griddled aubergine with yoghurt and mint

SIDE dish for grilled meat. Serves: 4.

Ingredient­s

4 small aubergines, sliced into ½ in thick rounds 2 tbsp olive oil 150g pot natural yoghurt

Juice of ½ lemon 2 garlic cloves

Small bunch mint, coarsely chopped

Method

1 Drizzle aubergine slices with olive oil and add seasoning.

2 Heat a griddle pan until hot and, in batches, cook aubergine on both sides until soft and lightly charred. Leave to cool.

3 Meanwhile, mix yoghurt with lemon juice, crushed garlic and most of the mint. Drizzle yoghurt dressing over aubergine. Scatter over remaining mint.
