TODAY’S RECIPE: Fig, burrata & prosciutto tartine
STUNNING but easy starter. Serves: 4. Ingredients
4 slices of sourdough
Olive oil, for drizzling 2 tbsp fig chutney 2x 100g balls burrata, drained 8 slices of prosciutto or parma ham 4-6 ripe figs, halved
Handful thyme, leaves picked
Method
1 Drizzle both sides of bread with olive oil, then toast in a hot griddle pan or under grill for two minutes on each side until golden brown. 2 Spread fig chutney over toast. Tear or chop burrata into chunky pieces and arrange on toast. Create little nests of prosciutto on top, then add fig halves. Sprinkle with thyme, drizzle with more olive oil and a little balsamic vinegar.
