Loaded veg stir-fry

Calorie-controlled cooking spray 1 onion, thinly sliced 1 carrot, cut into matchstick­s 1 red pepper, thinly sliced 100g shiitake mushrooms, sliced 2 garlic cloves, crushed 1 red chilli, finely chopped, plus extra to serve 1 tbsp ginger, grated 250g mangetout, trimmed 250g cabbage, shredded ¼ vegetable stock cube 1 tbsp kecap manis 600g courgette, spiralised 1 tbsp fresh coriander 1 tbsp lime juice LIGHTLY spray a non-stick wok or frying pan with cooking spray and place over a high heat. Stir-fry the onion, carrot, pepper and mushrooms for 5 minutes. Add the garlic, chilli, ginger, mangetout and cabbage, and stir-fry for further 1 minute. Dissolve the stock cube in 1 tablespoon of boiling water. Add the stock, kecap manis and courgette to the wok and stir-fry for 2 minutes or until the vegetables are just tender. Now add the coriander and lime juice. Serve with the extra sliced chilli and lime wedges.
