One’s hot cross buns

Royal chefs reveal their Easter recipe fit for the Queen

- By Sophie Huskisson

TO make hot cross buns fit for the Queen, one would think only a topsecret recipe using the finest ingredients would do.

In fact, Her Majesty’s Easter treats are remarkably rustic and easy to make – as a video released online by the royal pastry chefs shows.

They shared their step-by-step recipe on the Royal Family’s Instagram page, revealing the perfect technique for the fruitiest, fluffiest buns. And the ingredients are easy to get hold of too, though there are some special twists, such as fresh yeast, unrefined caster sugar and golden sultanas for a richer flavour.

The Queen employs only the best chefs to make her tea-time treats and puddings. Head of pastry Lucy Wilson spent more than six years as a souschef at the Michelin-starred Ritz in Mayfair and two years at five-star hotel Coworth Park in Ascot before joining the Royal Household.
