TODAY’S RECIPE: Beetroot and feta burgers
VEGGIE favourite. Serves: 6
Ingredients
300g peeled beetroot, and grated 2 shallots, chopped 200g feta, crumbled 2 garlic cloves, crushed 1 tsp cumin 1 tsp paprika Large handful of basil leaves, chopped 45g plain flour 1 egg 1 tbsp vegetable oil
TO SERVE: Buns, red onions, tomatoes and cucumber
Method
1 Put grated beetroot in a clean tea towel and squeeze out the water. Place in a bowl and combine with shallots, feta, garlic, cumin, paprika, basil, flour, 1 tsp salt and 1 tsp ground black pepper. Crack in the egg and mix with your hands to bring it all together.
2 Form into six patties, arrange on a baking tray lined with baking parchment and chill in the fridge for 20 minutes.
3 Heat oil in a large frying pan over a medium heat and fry burgers for a couple of minutes on each side. Serve in buns topped with salad.
