TODAY’S RECIPE: Traffic light chicken shish kebabs

THE colours say it all. Serves: 6-8.

Ingredient­s

6 chicken breasts 2 red peppers 2 orange peppers 2 green peppers

TO SERVE Warmed flatbreads, tomatoes and lemon wedges

Method

1 Mix together marinade ingredient­s. Spoon a third into a smaller bowl, cover and chill to serve as a sauce. Chop chicken into chunks and stir into larger bowl of marinade. Set aside for 20 minutes. 2 Chop peppers into large chunks. Thread peppers and chicken onto skewers. 3 Heat barbecue to medium and cook kebabs for ten minutes, turning occasional­ly until chicken is charred and cooked through. Or cook under a hot grill for 15 minutes. Serve with reserved yoghurt sauce, flatbreads, tomatoes and lemon wedges on side.
