RECIPE: Cheese, oat and spring onion soda bread
SLATHER with butter. Serves: 8. Ingredients
120g rolled oats, plus extra for topping 250g plain flour, plus extra for dusting 1tsp bicarbonate of soda 150g mature cheddar, grated 4 spring onions 350ml buttermilk, plus a little extra ½ tsp Dijon mustard
Method
1 Heat oven to 200c/180c fan/gas 6 and line baking tray with parchment. Blitz oats in a food processor until fine, then mix in a bowl with flour, bicarbonate of soda, ½ tsp salt and 1 tsp black pepper. Add 130g of cheese and all the chopped spring onions. 2 Mix buttermilk and mustard, then pour into dry ingredients. Use a cutlery knife to mix into a soft dough. Add another 1-2 tbsp buttermilk if needed. Turn on to a floured surface and knead briefly to bring together into a ball. 3 Transfer to prepared tray and flatten into a thick disc with your palm. Use a sharp knife to cut a deep cross, then scatter with remaining cheese and oats. Bake for 35 minutes until brown and the loaf sounds hollow when tapped on the bottom. Cool on a wire rack.
