TODAY’S RECIPE: Healthy oat, banana & raspberry cookies

ENJOY as a teatime treat or an energyboos­ting healthy breakfast.

Ingredient­s

2 ripe bananas, peeled and mashed

150g porridge oats

2 tbsp ground almonds

½ tsp ground cinnamon

100g raspberrie­s

Method

1 Heat oven to 200c/180c fan/gas 4 and line two baking trays with parchment. Mix banana, oats, almonds, cinnamon and a pinch of salt in a bowl to make a sticky dough. Stir through the raspberrie­s. Roll tablespoon­s of mixture into balls, arrange on baking trays and flatten with your hand.

2 Bake for 15 minutes until firm at edges and golden-brown. Leave to cool. Will keep in an airtight container for up to three days.
