TODAY’S RECIPE: Marrow soup
VEGGIE favourite. Serves: 6.
Ingredients
1 tbsp vegetable oil
2 onions, chopped
250g potatoes, chopped
1 marrow, chopped
1-2 tbsp curry powder
500ml veg stock
400g can butter beans
400ml coconut milk
Handful of coriander leaves
Method
1 Heat oil in a pan over a medium heat and fry onions with a pinch of salt for six minutes until soft. Add potatoes and cook for two minutes, then tip in marrow and curry powder. Cook for one minute. Pour in stock, drained butter beans and most of coconut milk. Bring to boil. Simmer for 20 minutes until veg is tender. 2 Remove from heat, cool slightly, then blitz in a blender until smooth. Warm over a low heat. Spoon into bowls, drizzle with reserved coconut milk and scatter with coriander.
