EDEN MILL GIN CURED SALMON Spring is in the air, which surely calls for a venture along the coast – and discoverin­g the freshest, most divine seafood available completes the experience. Scott Davies, Head Chef at The Adamson in St Andrews, designs innovative menus with his experience­d team that incorporat­e locally-sourced produce, and this beautifull­y light dish is no exception. Scott’s creation, Eden Mill gin cured salmon with fennel, cucumber, radishes and grapefruit, delivers fresh spring flavours and is in keeping with The Year of Food and Drink’s spring theme, brewing and distilling.
