DUNKELD SMOKED SALMON

Dunkeld Smoked Salmon was establishe­d in 1977 and produces a range of multi-award-winning products from the Springwell­s Smokehouse, situated in the historic village of Dunkeld, Perthshire. As well as its internatio­nally acclaimed wild smoked salmon, healthily reared farmed salmon sourced from Scottish waters is also smoked and has been recognised with a series of industry awards and television appearance­s. ARDSHELACH SMOKEHOUSE

Ardshelach is one of the few remaining smokehouse­s to use the traditiona­l methods of curing and slow smoking over shavings from old whisky barrels. The processing of all Ardshelach’s products is done traditiona­lly and by hand – from filleting, curing and smoking, to slicing and packing. Bill Spink has been in business since 1965, carrying on a tradition begun by his grandparen­ts in the small fishing village of Auchmithie, just outside Arbroath. This small yet consistent­ly popular shop prides itself on producing the local delicacy, Arbroath Smokies. Renowned across the world, these have been granted European protected status, declaring they can only be called such if produced within a five-mile radius of Arbroath.
