St An­drews Brew­ing Co. have brought back a clas­sic Ed­in­burgh street food dish first made pop­u­lar in the 19th cen­tury. Tweed Ket­tle was a cheap and nu­tri­tious wild salmon dish made with for­aged in­gre­di­ents, in­clud­ing lo­vage, sor­rel, mace, po­ta­toes, turnip and but­ter. Chef James Sher­riff’s ver­sion will be made with the more sus­tain­able sea trout and forms part of the pop­u­lar pub’s new menu.
