VICTORIAN STREET FOOD

Scottish Field - - FOOD & DRINK NEWS -

St Andrews Brewing Co. have brought back a classic Edinburgh street food dish first made popular in the 19th century. Tweed Kettle was a cheap and nutritious wild salmon dish made with foraged ingredients, including lovage, sorrel, mace, potatoes, turnip and butter. Chef James Sherriff’s version will be made with the more sustainable sea trout and forms part of the popular pub’s new menu.
