Scot­land’s first ab­sinthe

A cou­ple from Loch Ness have cre­ated Scot­land’s first ab­sinthe blanche. Hus­band and wife, Kevin and Lorien Cameron-Ross – who also cre­ated Loch Ness Gin – de­vel­oped the ab­sinthe recipe fol­low­ing a trip to the birth­place of the spirit, Val-de-Travers in Switzer­land. Loch Ness ab­sinthe has a lower ABV of 53% com­pared to ab­sinthe verte which is usu­ally 72% and the cou­ple sug­gest en­joy­ing it slowly as an aper­i­tif.
