Take tea - ve­gan style

A chef who once made a black­berry and ap­ple crum­ble for the Queen has cre­ated a ve­gan af­ter­noon tea for a Som­er­set gas­tropub. Marco Pil­loni has de­vised a spread in­clud­ing fin­ger sand­wiches, freshly baked scones with home­made jam and co­conut cream and a se­lec­tion of minia­ture desserts, for The White Hart at We­ston In Gor­dano. He pre­vi­ously worked as head pas­try chef at the Miche­lin-starred Club Gas­con in Lon­don, and also at the Royal Opera House, where he made the royal crum­ble.
