It’s all about colour in these fancy pudding recipes from our top chefs...

THE temperatur­es might be unseasonal­ly chilly, but the sunny days are glorious and everything is bursting with life.

Time to emulate the colours nature is conjuring up, with some vibrant colour on the plate.

Everyone loves puddings and these recipes from two well-known Welsh chefs are easy to make but make a considerab­le splash on the dining table.

In their bright freshness, they conjure

WHITE CHOCOLATE PARFAIT

From Jim Dobson, head chef at the Fox and Hounds, Llancarfan, Vale of Glamorgan

Ingredient­s

100g white chocolate, broken into up optimism and wellbeing.

A home-made pudding is always a treat and is very satisfying to serve up as family, friends and partners alike are unfailingl­y impressed by the culinary effort made.

In a couple of weeks’ time, we in squares

250ml ready-made vanilla custard 142ml carton double cream

Method

Line a loaf tin with clingfilm. Put the white chocolate in a medium-sized bowl over a pan of simmering water.

Wales will be able to sample such delicacies courtesy of the experts, as pubs and restaurant­s reopen for outdoor dining.

In the meantime, we can enjoy emulating the chefs we admire in our own kitchens.

When it has melted, gradually stir in the custard until it’s smooth.

Leave the mixture to cool. Whip the cream and fold it into the custard and chocolate mixture.

Pour into the lined loaf tin and freeze overnight. To serve, allow the frozen mixture to defrost a little.
