How can you tell it’s genuine Manuka?

As a rare and luxury food, Manuka has been subject to copies and fakes. To combat this the New Zealand Government created a scientific definition for Manuka. So all brands who export Manuka out of New Zealand must test their honey. The tests look for levels of five compounds as well as a DNA test to prove the honey is indeed from New Zealand.
