Mixed Fruit Clafoutis
IT’S Southport Flower Show weekend – so time for something colourful! I was mesmerised when I researched recipes of how to make clafoutis and couldn’t wait to give it a try. Traditional clafoutis is made using solely black cherries, but I have included mixed berries - just to take advantage of the seasonal offerings.
Ingredients:
4 Eggs 75g Caster sugar 330ml Single or pouring cream 1tsp Vanilla extract 40g Plain flour 100g Raspberries 125g Blueberries 80g Blackberries 250g Strawberries, hulled and halved
Icing sugar for dusting You will need a 1.5L baking dish. Preheat oven to 180c
Recipe:
Place the eggs, sugar, cream and vanilla in a bowl and whisk until frothy. Sift the flour over the mixture and continue to whisk until smooth.
Lightly grease the baking dish and arrange all the berries over the bottom. Cover the berries with the mixture.
Bake for 55 minutes to an hour or until set and golden.
Just before serving dust with the icing sugar.
This very simple recipe results in something that looks really quite impressive and complex! So totally show off and enjoy!
