Head into Clouds for taste of future cuisine

ONE of Southport’s hidden gems, the studentrun restaurant Clouds, is set to reopen next week.

The restaurant based at Southport College, which opens its doors next Wednesday (October 3), presents a unique opportunit­y for residents to get an early glimpse of the finest local culinary talent at the restaurant graced by some of the town’s most notable exports.

Vivienne Tarleton, restaurant manager at Clouds, gave a rundown of the impressive alumni that have passed through the restaurant.

“Through the college we have had Marcus Wareing and Marc Verite; more recently one of our chefs, Jack Bond, now works for Marcus.

“We have also had Johnny Howard, who works with Martin Wishart in Edinburgh.”

The restaurant will be open for lunch on Tuesdays and Thursdays, as well as themed nights to be scheduled on a Wednesday.

Vivienne said: “We have a variety of dishes. For lunches we do set a price menu, and for evening meals we try to do a little bit more of a fine dining sort of thing.

“Last year for instance we did Alice In Wonderland and King Arthur-themed nights.

“Employers come in and design menus, and we do a lot of work with Anfield.

“We just try to work with all the employers in the area.”

Students are involved in the entire working of the restaurant, giving them a rounded experience that opens doors in all areas of the industry.

From working in the kitchen to front of house, the college takes a holistic approach to the course in the first year.

Vivienne said: “It gives them that sort of range of employabil­ity skills, then when they get to their second year they choose what they specialise in.

“When they get to their third year they supervise and run their own events throughout the year.”

Clouds will also be hosting Comedy In The Clouds on Wednesday, October 17 as part of the Southport Comedy Festival, starring George Lewis and Jack Gleadow.
