Early-season ducks

-

Do you shoot early-season ducks and geese? I always think there isn’t much point as they are full of pin feathers. I would like to know what you think and how you prepare them? Tom says: This is down to personal choice. I know that it isn’t the best to shoot birds when they aren’t fully coloured up and still have the dreaded pin feathers. However, I do still shoot ducks and geese early season. I normally skin them and breast the main fillets — this means that the pin feathers aren’t a problem. I usually find that they have plenty of meat on them still but not the fat levels. The fat doesn’t bother me as I breast them anyway.
