Steak? Sounds simple, doesn’t it? Chef Tim Maddams goes back to basics

Cooking a steak. How hard can that be? Surely we do not need a whole recipe devoted to that simple task, with the addition of one of the simplest steak dressings ever invented? Well, most of us think the thing we do a lot of is quite simple – ask any home loader and they will tell you that loading your own rounds is simple, what they take for granted is a base level of competence that many of us mere mortals lack. This ‘assumed’ knowledge is the ruin of many a good meal. So, I think this is a vital, basic skill that will improve at least to some extent your steak-eating experience, be that venison, veal, mutton or beef.
