Jew­elled cous­cous SALAD

200g gi­ant cous­cous 1tbsp olive oil Juice 1 le­mon 100g pomegranat­e seeds 3 spring onions, finely sliced Hand­ful fresh pars­ley, chopped

Put the cous­cous in a pan of boil­ing wa­ter. Re­turn to the boil and sim­mer for 6 mins. Drain well, coat in oil and leave to cool. Stir through the le­mon juice, pomegranat­e seeds, spring onions and pars­ley, then sea­son.

gi­ant cous­cous makes a lovely al­ter­na­tive to rice and is per­fect served hot or cold
