4tbsp peper­onata (sweet pep­pers in sauce) 2tsp sun­flower oil 8 eggs, beaten 2 slices ham, cut into strips 100g re­duced­fat Ched­dar, grated Fresh basil, torn, plus leaves to gar­nish Crusty bread and salad, to serve (op­tional)

Pre-heat the grill to medium-high. Then gen­tly heat the peper­onata in a saucepan. Brush a lit­tle oil in a small non-stick fry­ing pan. Add ¼ of the beaten eggs, stir a lit­tle and cook for 5 mins, or un­til the eggs are lightly set. Add ¼ of the ham, some torn basil leaves and ¼ of the grated cheese. Place un­der the grill for 1 min, un­til golden. Spoon ¼ of the peper­onata over the omelette and then fold in half. Re­peat for the other three omelettes. Serve gar­nished with basil leaves, ac­com­pa­nied by crusty bread and salad.
