White chocolate fruit tarts
TAKES 30MINS SERVES 6-8 Preheat oven to 180°C/gas 4. Gently heat 150ml double cream in a pan. Remove from the heat and add 100g chopped white chocolate and ½tsp vanilla extract. Cool, then stir in 1 complete egg and 1 egg yolk. Pour into 6-8 ready-made butter pastry cases and bake for 10-12 mins. Leave to cool, then top with 125g mixed fruit, sliced. Heat 2tbsp raspberry or apricot jam till melted and brush over the tarts. Chill before serving.
