Spring veg with hal­loumi

Takes 20mins serves 6 250g hal­loumi, sliced 2tbsp olive oil 1 head of fen­nel, sliced 4 spring onions, sliced 500g pack spring greens 1 car­rot, grated 350g fruity cous­cous

Heat a fry­ing pan, add the hal­loumi and fry for 3 mins, un­til browned. Set aside. In the same pan, heat 1tbsp oil, add the fen­nel and spring onions and stir-fry for 2 mins. Add the greens and car­rot and heat through for a few mins. Top with the hal­loumi and driz­zle over 1tbsp oil. Serve with the cous­cous.
