Spicy chicken bur­ri­tos

Takes 30mins serves 2 Pre­heat the oven to 200°C/ Gas 6. Fry 1 sliced red onion and 250g mixed pep­pers in 1tbsp olive oil for 5 mins. Add 1tbsp Ca­jun spice mix and 400g bone­less chicken thighs and fry for a few mins. Add a 400g can plum toma­toes and cook for 3 mins. Di­vide be­tween 4 large tor­tillas and roll up. Ar­range in an oven­proof dish and spoon over the re­main­ing plum toma­toes. Mix to­gether 200g nat­u­ral yo­ghurt, 1tbsp corn­flour and 65g grated ma­ture Ched­dar and spoon over the top. Scat­ter with 60g grated ma­ture Ched­dar and bake for 20 mins.
