375g all-but­ter puff pas­try 1kg cher­ries, stoned and halved 2tbsp gran­u­lated sugar 2tbsp corn­flour Zest of 1 lemon 1 egg, beaten 4tbsp caster sugar

1 Pre­heat oven to 220°C/fan 200°C/gas 7 and heat 25cm pie dish. Roll out 3⁄4 of pas­try, line dish. 2 Mix cher­ries, sugar, corn­flour and lemon zest. Tip onto base. Roll and cut the rest of the pas­try into 2cm wide strips and place over the mix­ture, press­ing down well. 3 Glaze with the egg and sprin­kle with caster sugar. Bake for 15min then re­duce tem­per­a­ture to 180°C/fan 160°C/gas 4 for 40min. Serve with cus­tard or cream.
