AMERICAN CHERRY LATTICE PIE

375g all-butter puff pastry 1kg cherries, stoned and halved 2tbsp granulated sugar 2tbsp cornflour Zest of 1 lemon 1 egg, beaten 4tbsp caster sugar
1 Preheat oven to 220°C/fan 200°C/gas 7 and heat 25cm pie dish. Roll out 3⁄4 of pastry, line dish. 2 Mix cherries, sugar, cornflour and lemon zest. Tip onto base. Roll and cut the rest of the pastry into 2cm wide strips and place over the mixture, pressing down well. 3 Glaze with the egg and sprinkle with caster sugar. Bake for 15min then reduce temperature to 180°C/fan 160°C/gas 4 for 40min. Serve with custard or cream.
