TURKEY MEATBALLS
Takes 35min serves 4
1 large onion, halved 2 sticks of celery, roughly chopped 500g turkey mince 2tsp ground cumin Small bunch of fresh coriander, chopped
Zest of 1 lemon 1 egg 3tbsp fresh breadcrumbs 2tbsp oil
1 garlic clove, crushed 2 x 400g tins chopped tomatoes Rice or potato wedges and salad, to serve
1 Whizz the onion and celery in a food processor to make a chunky paste. 2 In a bowl, mix the turkey mince, cumin, coriander, lemon zest, egg and breadcrumbs with 2tbsp of the paste and season well. 3 Shape into 24 small balls. Heat half the oil in a pan and fry the meatballs in batches for about 10min, until browned. 4 In a small pan, heat the remaining oil. Add the remaining paste along with the garlic, then cook gently for 3min. Pour in the chopped tomatoes and allow to bubble for 5min until thickened. Stir through the meatballs and simmer until cooked through. Serve half with rice or potato wedges and salad, saving the rest for the recipe below.
