SUPER-HEARTY SUPPER SALAD
Takes 10min serves 4
2tbsp olive oil 1 garlic clove, sliced 300g sourdough or crusty white bread, cut into chunky cubes
Half the Tray-roasted Chicken and veg (as per recipe left)
120g rocket 200g feta, crumbled 2tbsp mixed seeds (optional)
1 Heat the oil in a frying pan. Fry the garlic for 5min until golden. Scoop out the garlic slices, discard, then add the bread to the pan. Season and toss over a medium heat for 10min until the bread is crispy and golden. 2 Slice the reserved chicken, then toss with the reserved veg and the rocket. Divide between four bowls and top with the crumbled feta, golden croutons and seeds, if using.
