250g butter 200g dark chocolate, broken into chunks 75g cocoa 75g plain flour 1tsp baking powder 300g caster sugar 5 eggs 1tsp vanilla extract 1 pack of Rolos, halved 20g popping candy

1 Preheat the oven to 180°C/fan 160°C/gas 4. Line a 20x30cm baking tin with baking paper. Melt the butter in a pan over a low heat, add the chocolate and heat gently for 1min. Remove from the heat and keep stirring until melted. 2 Sift the cocoa, flour and baking powder into a large bowl. Stir in the caster sugar, then stir in the eggs, vanilla and melted chocolate mixture. Spoon the mix into the tin and use a palette knife or the back of a spoon to smooth over the top. Scatter the rolo halves over the brownie, pressing them down into the mix slightly. Bake for 25min until cooked, but still squidgy. 3 Leave to cool in the tin, cut into squares and sprinkle over the popping candy just before serving.
