GARLIC & ROSEMARY ROAST POTATOES

2kg potatoes, peeled and quartered 100ml rapeseed oil 6 cloves garlic, bruised, unpeeled 2 sprigs rosemary

Preheat the oven to 200°C/180°C fan/ Gas 6. Place potatoes in cold, salted water. Bring to boil and simmer 5-10mins, drain and shake in the pan to fluff edges. Heat oil in roasting tin, add potatoes. Toss to coat and roast for 30mins. Add garlic and rosemary, cook until crisp and golden. Sprinkle with sea salt, serve.
