GOAT’S CHEESE & PEPPER PIZZA
Preheat the oven to 200°C/180°C fan/ Gas 6. Using two shop-bought pizza bases, spread them with 1 heaped tbsp sun-dried tomato paste. Meanwhile, cook 2 sliced red onions, 2 red and two yellow peppers, deseeded and thickly sliced, in 2tbsp olive oil for 20min until very soft. Add a splash of red wine vinegar, 2 sliced cloves of garlic, 4 peeled and chopped tomatoes, 2tbsp pitted and chopped black olives and a few springs of thyme, and cook for a further 10min. Leave to cool, then divide between the pizza bases. Top with the goat’s cheese and bake for 10-15min until golden.
