GOAT’S CHEESE & PEP­PER PIZZA

Pre­heat the oven to 200°C/180°C fan/ Gas 6. Us­ing two shop-bought pizza bases, spread them with 1 heaped tbsp sun-dried tomato paste. Mean­while, cook 2 sliced red onions, 2 red and two yel­low pep­pers, de­seeded and thickly sliced, in 2tbsp olive oil for 20min un­til very soft. Add a splash of red wine vine­gar, 2 sliced cloves of garlic, 4 peeled and chopped toma­toes, 2tbsp pit­ted and chopped black olives and a few springs of thyme, and cook for a fur­ther 10min. Leave to cool, then di­vide be­tween the pizza bases. Top with the goat’s cheese and bake for 10-15min un­til golden.
