SAUSAGE & SPINACH FRITTATA

6 sausages, cut into bite-sized pieces 1 red onion, cut into wedges Large handful cherry tomatoes 1tbsp olive oil 100g spinach 6 eggs, beaten Mixed salad leaves, to serve
1 Preheat the oven to 200°C/fan 180°C/gas 6. Put the sausage pieces, onion and tomatoes in the base of either an ovenproof pan or a small ovenproof dish and drizzle over the olive oil. Cook for 10-15min, until almost cooked through and the onion is slightly crisp. 2 Reduce the oven temperature to 180°C/fan 160°C/gas 4. Add the spinach to the dish and pour in the beaten egg. Cook the frittata for 10-15min, until golden and almost set. 3 Cut the frittata into wedges to serve with the salad. If you’re looking for an extra filling dinner, bulk this out with new potatoes.
