BROCCOLI WITH LEMON & GARLIC CRUMBS

Takes 20min serves 6 500g Tenderstem broccoli 75g day-old bread, crusts removed 1 garlic clove, crushed 5tbsp fruity extra virgin olive oil Zest ½ lemon and 1tbsp lemon juice

1 Bring a pan of water to the boil and blanch the broccoli for a couple of min until tender. Drain and refresh under cold water. 2 Whizz the bread with the garlic and 2tbsp of the olive oil until coarse, tip into a frying pan and cook over a medium heat for 5min, until deep golden and crisp, then set aside. 3 Gently warm the lemon zest and juice and remaining olive oil in a pan. Season well with salt and black pepper. Add the broccoli to the pan and coat in the dressing until hot. Transfer to a serving plate and scatter over the breadcrumb mixture.
