STEAM-BAKED ASIAN-STYLE HADDOCK

2 bok choy, halved or ½ white cabbage, shredded 4 x 200g haddock fillets Juice of 1 lemon 2tbsp sesame oil 4tsp ketjap manis (Indonesian soy sauce) 1tbsp tamarind paste lemon wedges and sticky rice to serve

1 Preheat the oven to 200°C/fan 180°C/ Gas 6. Place the bok choy on four separate sheets of non-stick baking paper and top each with a piece of fish. 2 Mix together the lemon juice, sesame oil, ketjap manis and tamarind paste, and top each fillet with the mixture. Season well with salt and black pepper. Fold, roll and seal the baking paper to enclose the fillings. 3 Place on a baking tray and bake for 12-15min until the fish is cooked through. Garnish with a lemon wedge and serve immediatel­y, with sticky rice on the side.
