FRENCH TOAST

2 eggs 1tbsp coconut milk 2tsp ground cinnamon 2 slices of gluten-free bread 1tsp coconut oil
245ml yogurt 2tbsp pure maple syrup (or rice syrup or coconut nectar)
Fresh fruit, to serve
1 Crack the eggs into a bowl and beat with a whisk. Add the coconut milk and cinnamon. Whisk again to mix. 2 Cut the slices of bread in half, place into the egg mixture and let them soak until saturated, about 2min. 3 Heat the coconut oil in a frying pan over a medium heat. When the oil is hot, add the slices of egg-soaked bread to the pan. 4 Pour the remaining egg mixture over the bread. Cook until golden, then flip and cook until the other side is golden and the egg is cooked through. Transfer to a plate. 5 While the French toast is cooking, whisk the yogurt and maple syrup together in a small bowl. Serve the French toast with dollops of yogurt and pile fresh fruit on top.
