CHICKEN LOLLIPOPS WITH PIZZA BREAD

500g chicken thighs, cut into chunks Zest ½ lemon 1tbsp mayonnaise 2tbsp fresh breadcrumb­s 2tbsp green pitted olives Small handful basil Oil

FOR THE PIZZA BREAD 2x220g The Northern Dough Company frozen pizza dough, defrosted 4tbsp tomato pasta sauce 250g mozzarella, torn

1 Preheat the oven to 200°C/fan 180°C/gas 6. Whizz the chicken, zest, mayonnaise, breadcrumb­s, olives and basil with black pepper in a processor. Form into 12 balls around skewers. Brush with oil and brown in a non-stick pan. Transfer to a tray lined with baking paper and cook in the oven for 10min. 2 Roll out the pizza dough, top with the sauce and mozzarella. Transfer to a baking tray and bake for 10min. Serve with crunchy salad and the chicken lollipops.
