CRISPY CRUMBED FISH BITES

Juice ½ lemon 250g white fish fillets, chopped into pieces 60g dried breadcrumb­s 60g polenta Pinch of paprika 1 egg, beaten 2tbsp olive oil Oven chips, to serve

1 Preheat the oven to 200°C/fan 180°C/gas 6. Squeeze lemon juice over the fish pieces. 2 Mix together the dried breadcrumb­s, polenta and paprika. Season with salt and freshly ground black pepper. Take a piece of fish and dip it in the beaten egg, then roll in the breadcrumb­s. Repeat the process until all the fish pieces are coated. 3 Place the fish pieces on a non-stick baking sheet and drizzle with a little olive oil. 4 Bake the coated fish pieces in the oven for 15-20min, turning halfway, until cooked through. Serve with oven chips.
