CHEESE TORTILLA

2tbsp olive oil ½ small red onion, diced 1 green pepper, chopped 350g boiled potatoes, cooled 6 eggs, beaten 120g Wensleydale cheese with cranberries, crumbled
120g Brie, sliced Few sage leaves (optional) Mixed salad, to serve
Heat the olive oil in a large frying pan. Add the red onion and green pepper, and fry for 6min until they have softened. Add the boiled potatoes and cook for a further few minutes to heat them through. Pour in the beaten eggs and season with salt and freshly ground black pepper. Cook the egg mixture for 5min, and preheat the grill. Top the egg mixture with the Wensleydale and Brie, plus a few sage leaves, if using, then place under the grill for a few minutes until the top turns golden. Serve with a mixed salad.
