CURRIED SLAW
TAKES 10 MINS SERVES 4-6
3tbsp mayonnaise
3tbsp plain yogurt
2tsp curry paste
250g red cabbage, core and outer leaves discarded, shredded
195g can sweetcorn, drained
2 medium carrots, peeled and cut into very fine strips
4 spring onions, trimmed and chopped, or 4tbsp chopped fresh parsley
1 eating apple, quartered, cored and sliced

Whisk the mayonnaise, yogurt and curry paste together in a large bowl. Stir in all the vegetables and, lastly, the apple. Season generously with salt and black pepper and stir again to combine.
