BEEF STIR FRY

TAKES 10 MINS SERVES 4

2 x 200g sirloin steaks, sliced 1tsp sunflower oil 6 spring onions, sliced, plus extra to serve 300g mixed mushrooms, sliced 200g sugar snap peas 250g wide noodles Pinch chilli flakes 2tbsp toasted cashews, chopped FOR THE MARINADE 100ml teriyaki sauce Juice of 2 limes 3tbsp soy sauce Pinch of sugar

1 Put the sliced steaks in a dish, toss them in the marinade ingredient­s.

2 In a wok, heat the oil. Fry the spring onions, mushrooms and sugar snap peas for 3 mins until just cooked. Set aside.

3 Add the meat to the wok, reserve the leftover marinade. Cook for 2-3 mins, then remove and set aside with the veg. Turn the heat down, pour in the marinade and bring to a simmer for 2-3 mins.

4 Cook the noodles to pack instructio­ns. Add the noodles into the wok, with the beef and vegetables. Stir until everything is warmed through, adding a splash of hot water to loosen if necessary. Sprinkle over extra spring onion, chilli flakes and cashews.
