GOOEY DOUBLE CHOCOLATE COOKIES
TAKES 40 MINS MAKES 10 100g butter, softened 125g light muscovado sugar 1 medium egg yolk 125g plain flour 30g cocoa powder ½tsp bicarbonate of soda 100g dark chocolate, roughly chopped 60g pecan nuts, chopped YOU WILL NEED 2 baking sheets, lined with baking parchment
1 Cream the butter and sugar until light and fluffy. Beat in the yolk. Mix in the remaining ingredients. Chill for 20 mins.
2 Heat the oven to 190C/gas 5. Divide the mixture into 10. Roll each portion into a ball.
3 Arrange, spaced well apart, on the baking sheets and press to flatten to about 1.5cm thick. Bake for 10-12 mins until risen and cracked but still a bit soft and gooey.
4 Cool for 5 mins, then transfer to a wire rack until completely cooled.
