SPICED RICOTTA WITH HONEY AND WALNUTS ON TOAST
TAKES 10 MINS SERVES 6
250g ricotta cheese 1tbsp icing sugar ½tsp cinnamon 1tsp lemon juice 100g walnut halves 12 slices sourdough bread 40ml honey
Micro herbs, to garnish (optional)

Add the ricotta cheese, icing sugar, cinnamon and lemon juice to a bowl. Whisk together until the mixture is light and fluffy.

Place a dry frying pan over a medium heat. Gently toast the walnuts, shaking the pan from time to time, until fragrant. 3
Toast the bread to your liking, then spread each slice with the spiced ricotta mixture. Sprinkle over some walnuts and a drizzle of honey. Garnish with micro herbs, if using.
