FALAFEL BURGER WITH TZATZIKI
TAKES 30 MINS SERVES 8
FOR THE BURGERS
800g tinned chickpeas, drained and patted dry 2 garlic cloves, crushed Handful each of parsley and coriander 1 red chilli, deseeded 2tsp ground cumin 2tsp ground coriander 2tbsp wholemeal flour 1tbsp vegetable oil
8 burger buns, halved and toasted Rocket leaves, tomato slices, mayonnaise and ketchup, to serve FOR THE TZATZIKI 100ml Greek yogurt 1tbsp lemon juice 1 garlic clove, crushed
½ cucumber, finely grated
Whizz the chickpeas, garlic, herbs, chilli and spices in a food processor until finely chopped. The mixture should be thick and dry – if it’s not, add some of the wholemeal flour until it comes together. Shape into eight burgers. Heat the oil in a large frying pan and fry four burgers at a time, until golden – about 3min on each side.
Mix the tzatziki ingredients in a bowl. Top each bun with tomato, rocket, a burger and tzatziki.
