Mixed beans in chilli sauce
SERVES 4
1 tbsp olive oil 1 medium onion,
● ● chopped 1 clove of garlic, minced

2 x 400g tin mixed beans in chilli
● sauce 250g passata 150ml
● ● vegetable stock Sour cream, to serve
●
Large handful of grated Cheddar,
● to serve Flat-leaf parsley, to serve
● 1. Add the olive oil, onion and garlic to a large saucepan. Place the pan over a medium heat and cook for 5 minutes until the vegetables are soft and translucent.
2. Add the two tins of mixed beans, passata and vegetable stock and simmer gently for 15 minutes. 3. Ladle the beans into bowls and serve with a dollop of sour cream, grated cheese and a sprig of parsley on top.
