Mixed beans in chilli sauce

SERVES 4

1 tbsp olive oil 1 medium onion,

● ● chopped 1 clove of garlic, minced

2 x 400g tin mixed beans in chilli

● sauce 250g passata 150ml

● ● vegetable stock Sour cream, to serve

Large handful of grated Cheddar,

● to serve Flat-leaf parsley, to serve

● 1. Add the olive oil, onion and garlic to a large saucepan. Place the pan over a medium heat and cook for 5 minutes until the vegetables are soft and translucen­t.

2. Add the two tins of mixed beans, passata and vegetable stock and simmer gently for 15 minutes. 3. Ladle the beans into bowls and serve with a dollop of sour cream, grated cheese and a sprig of parsley on top.
