Tomato and parsley pasta
SERVES 4
500g spaghetti 2 tbsp
● ● extra-virgin olive oil 1 medium
● onion, finely chopped 1 clove
● garlic, crushed 300g fresh
● cherry tomatoes, halved
Freshly milled salt and
● pepper Small handful of
● fresh parsley, roughly chopped
40g Parmesan, shaved

1. Cook the spaghetti according to the packet instructions.
2. Put a saucepan over a medium heat. Add 1 tablespoon of olive oil and the onion and garlic. Cook for 5 minutes until soft and translucent.
3. Drain the pasta and toss with the remaining olive oil, the onion and garlic mixture, and the cherry tomatoes.
4. Season with milled salt and pepper.
5. Scatter with parsley and Parmesan and then serve immediately.
