Bakewell Tart

The original Bakewell Tart is said to have been baked by mistake by Mrs Greaves, landlady of the White Horse Inn in Bakewell, Derbyshire, during the mid 1800s. She asked her cook to pour a mixture into pastry cases then add jam, but the cook put the jam in first in error. The result was so good, the recipe stuck.

Today’s recipe is made using a pastry shell, a layer of jam, frangipane mix, then topped with flaked almonds. The iced version, with a cherry on top, is also popular, along with the Bakewell pudding, made with a puff pastry case.
