The 39-year-old Romanian man said he felt “very tired” and hungry after shifts of up to 11 hours.
He was expecting £30 a shift but got £20 after rent and costs were deducted.
The unnamed man said he had a spongy glove, wore his own clothing and was not given protective garments in early 2017.
He said: “I wasn’t able to stand on my feet any more. Because of the water.”
Sitar Ali, 33, Defrim Paci, 42, and brother Jetmir, 37, who ran Shiny in Carlisle, all deny modern-day slavery charges at the city’s crown court.
