Ahi tuna is robustly seasoned with jerk spices and served with avocado puree and a fresh mango emulsion.

Two courses later, medallions of butter-poached Maine lobster bask in an intense bisque, adorned with a potato crisp shaped like Venus sea fan coral – a fond flashback to my encounter with Crush.

Snacks and salads are in bountiful supply until late from Luigi’s Pizza, Tow Mater’s Grill and Fillmore’s Favorites on Deck 11. Queues form at the Monsters, Inc-themed Eye Scream quick service that changes flavours of swirled soft-serve cones each day.

Five lounges and nightclubs in the adults-only District area include a Skyline bar where cocktails are sipped to expansive computer-generated cityscapes that change every 15 minutes.
