Warm up with a winter drink

120 grams milk chocolate chopped Pinch of salt Melt the chocolate on a gentle heat and add half the milk. Allow the mixture to gently simmer (do not boil) and once the chocolate has melted add the rest of the milk. Keep stirring the mixture and add a pinch of salt. Stir in the Warninks Advocaa and then serve with whipped cream for over the top indulgence. 150 grams caster sugar 500ml whole milk 400ml double cream 350ml bourbon 2 tbsp nutmeg Whisk the egg yolks and 100g sugar together in a bowl then stir in the milk, cream, nutmeg and bourbon. Pour the mixture into bottles and store in the fridge. Freeze the egg whites until ready to serve then blend the whites with 50g sugar until foamy. Pour the egg nog from the bottles into a bowl, fold in the egg white mixture, whisk and serve.
